eggs, greek yogurt, flour, sugar and baking powder This is the fluffiest cake we’ve ever made

INGREDIENTS:

  • 4 eggs
  • 200g Greek yogurt
  • 1/2 cup sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder

METHOD:

  1. Preheat your oven to 170°C (340°F) and grease a cake pan.
  2. In a bowl, separate the egg yolks from the whites.
  3. Mix the egg yolks with sugar until well combined.
  4. Add Greek yogurt to the egg yolk mixture and mix until smooth.
  5. In a separate bowl, sift together flour and baking powder.
  6. Gradually add the flour mixture to the egg yolk mixture, stirring until smooth.
  7. In another clean bowl, beat the egg whites until stiff peaks form.
  8. Gently fold the beaten egg whites into the batter until fully incorporated.
  9. Pour the batter into the prepared cake pan and smooth the top.
  10. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  12. Once cooled, slice and serve. Enjoy your fluffy cake!
