Potato Rolls with Cheese and Chicken

Potato Rolls with Cheese and Chicken are soft, comforting rolls filled with tender chicken and melted cheese, making them perfect for lunch, dinner, or a satisfying snack. The potatoes keep the rolls moist and fluffy, while the savory filling adds rich flavor.

Ingredients for the dough: 2 cups mashed potatoes (plain, no butter or milk), 1 packet (2¼ teaspoons) active dry yeast, ¼ cup warm milk, 2 tablespoons sugar, ¼ cup unsalted butter melted, 1 large egg, 4–4½ cups all-purpose flour, and 1 teaspoon salt.

Ingredients for the filling: 2 cups cooked chicken finely chopped or shredded, 1½ cups shredded mozzarella or cheddar cheese, ½ teaspoon garlic powder, ½ teaspoon onion powder, salt and black pepper to taste, and optional chopped parsley.

To prepare the dough, dissolve the yeast and sugar in the warm milk and let it sit for 5–10 minutes until foamy. In a large bowl, combine the mashed potatoes, melted butter, egg, and salt. Add the yeast mixture and stir well.

Gradually add the flour, mixing until a soft dough forms. Knead the dough on a lightly floured surface for 8–10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.

To prepare the filling, mix the cooked chicken, shredded cheese, garlic powder, onion powder, salt, black pepper, and parsley if using in a bowl.

Punch down the risen dough and divide it into equal portions. Flatten each portion into a small circle, add a spoonful of the chicken and cheese filling in the center, then fold and seal the edges to form a roll.

Place the rolls seam-side down on a greased baking sheet. Cover and let rise for another 20–30 minutes.

Preheat the oven to 375°F (190°C). Bake the rolls for 18–22 minutes, or until golden brown.

Remove from the oven and allow to cool slightly before serving warm.
