Pineapple Cream Cheese Cobbler

Ingredients

Pineapple Layer

  • 2 cans (20 oz each) crushed pineapple, undrained

  • ¾ cup granulated sugar

  • 1 tablespoon cornstarch

  • 1 teaspoon vanilla extract

Cream Cheese Layer

  • 8 oz cream cheese, softened

  • ½ cup powdered sugar

  • 1 teaspoon vanilla extract

Cobbler Topping

  • 1 cup all-purpose flour

  • 1 cup granulated sugar

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • ½ cup (1 stick) butter, melted

  • ¾ cup milk

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 baking dish.

  2. Make the pineapple layer:
    In a bowl, mix crushed pineapple (with juice), sugar, cornstarch, and vanilla. Spread evenly in the baking dish.

  3. Prepare the cream cheese layer:
    Beat cream cheese, powdered sugar, and vanilla until smooth. Drop spoonfuls over the pineapple layer (don’t worry about spreading perfectly).

  4. Make the cobbler topping:
    In a bowl, whisk flour, sugar, baking powder, and salt. Stir in milk, then melted butter until just combined.

  5. Assemble:
    Pour the batter evenly over the pineapple and cream cheese layers. Do not stir.

  6. Bake for 45–50 minutes, until golden brown and bubbly around the edges.

  7. Cool slightly before serving (it thickens as it sits).

Serving Ideas

  • Serve warm with vanilla ice cream or whipped cream

  • Sprinkle toasted coconut or chopped pecans on top

  • A tiny pinch of cinnamon or nutmeg adds a cozy twist
