Crispy Parmesan Roasted Squash

Ingredients:

2 medium squash (yellow or zucchini), thinly sliced

1 tablespoon olive oil

Salt to taste

Black pepper to taste

1/3 cup grated Parmesan cheese

 

Instructions:

Preheat oven to 425°F (220°C).

Line a baking sheet with parchment paper and lightly grease it.

Arrange the squash slices in a single layer on the baking sheet.

Drizzle olive oil evenly over the squash slices.

Sprinkle salt, black pepper, and Parmesan cheese generously over the top.

Bake for 15 minutes, or until the edges are crispy and the cheese is golden.

Serve warm and enjoy.

Total Time: 25 minutes

Calories: 120 kcal per serving
