Stuffed Pepper Soup

Ingredients

1 pound ground beef or ground turkey

1 tablespoon olive oil

1 medium onion, chopped

3 bell peppers, chopped (any colors)

3 cloves garlic, minced

1 can (28 oz) diced tomatoes

1 can (15 oz) tomato sauce

4 cups beef or chicken broth

1 teaspoon Italian seasoning

½ teaspoon paprika

½ teaspoon black pepper

Salt to taste

1 cup cooked rice
Instructions

Heat olive oil in a large pot over medium heat.

Add ground meat and cook until browned. Drain excess fat if needed.

Stir in onion and bell peppers. Cook 4–5 minutes until softened.

Add garlic and cook 30 seconds until fragrant.

Stir in diced tomatoes, tomato sauce, broth, Italian seasoning, paprika, pepper, and salt.

Bring to a boil, then reduce heat and simmer for 25–30 minutes.

Stir in cooked rice and simmer 5 more minutes.
