Seafood Bisque with Crab, Shrimp, and Lobster

Description:
Seafood bisque is a rich, creamy soup made with tender crab, shrimp, and lobster simmered in a flavorful broth. Smooth, elegant, and deeply comforting, this bisque is perfect for special occasions, holidays, or an impressive homemade dinner.


Ingredients

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tablespoons all-purpose flour

  • 3 cups seafood stock or chicken broth

  • 1 cup heavy cream

  • ½ cup half-and-half (optional, for extra creaminess)

  • ½ teaspoon paprika

  • ¼ teaspoon cayenne pepper (optional)

  • Salt and black pepper to taste

  • 1 cup cooked crab meat

  • 1 cup cooked shrimp, peeled and chopped

  • 1 cup cooked lobster meat, chopped

  • 1 tablespoon tomato paste (optional, for color and depth)


Instructions

  1. In a large pot, melt butter with olive oil over medium heat.

  2. Add onion and cook until soft and translucent, about 4–5 minutes.

  3. Stir in garlic and cook for 30 seconds until fragrant.

  4. Sprinkle flour over the mixture and stir constantly for 1–2 minutes to form a roux.

  5. Gradually whisk in seafood stock, stirring until smooth.

  6. Add tomato paste, paprika, cayenne (if using), salt, and pepper.

  7. Bring to a gentle simmer and cook for 10 minutes, stirring occasionally.

  8. Stir in heavy cream and half-and-half. Simmer gently for 5 minutes.

  9. Add crab, shrimp, and lobster. Cook 3–5 minutes, just until heated through.

  10. Taste and adjust seasoning before serving.


Tips and Variations

  • Do not boil after adding cream to prevent curdling.

  • For a smoother bisque, blend part of the soup before adding seafood.

  • Garnish with fresh parsley or a drizzle of cream if desired.
