Chicken and Bacon Fried Rice

Ingredients

2 cups cooked rice, cold (day-old works best)

1 cup cooked chicken, diced or shredded

4 slices bacon, chopped

2 large eggs, beaten

2 tablespoons vegetable oil (divided)

½ cup frozen peas and carrots (optional)

3 green onions, sliced

2–3 tablespoons soy sauce

½ teaspoon garlic powder or 1 clove garlic, minced

Black pepper to taste
Instructions

In a large skillet or wok over medium heat, cook chopped bacon until crispy. Remove bacon and set aside, leaving the grease in the pan.

Add 1 tablespoon vegetable oil to the pan if needed. Pour in the beaten eggs and scramble until just set. Remove and set aside.

Add remaining oil to the skillet. Stir in garlic and cook briefly until fragrant.

Add cooked rice, breaking up any clumps. Cook for 3–4 minutes, stirring occasionally, until heated through.

Stir in chicken, peas and carrots (if using), and green onions. Cook for 2–3 minutes.

Add soy sauce and black pepper. Stir well to evenly coat the rice.

Return bacon and scrambled eggs to the pan. Toss everything together and cook 1–2 more minutes.

Taste and adjust seasoning before serving.
