Meatloaf with Mashed Potatoes and Cheese

Ingredients

Meatloaf Layer

  • 1½ pounds ground beef

  • 1 cup breadcrumbs or crushed crackers

  • 1 cup milk

  • 2 large eggs

  • ½ cup chopped onion

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon black pepper

  • ½ teaspoon salt

  • ½ cup ketchup

Mashed Potato Layer

  • 3 cups prepared mashed potatoes (homemade or instant)

  • 2 tablespoons butter

  • ¼ cup milk or cream

Cheese Topping

  • 1½ cups shredded cheddar or Colby Jack cheese


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. In a large bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic powder, onion powder, pepper, salt, and ketchup. Mix just until combined.

  3. Press the meatloaf mixture evenly into the bottom of the baking dish.

  4. In a bowl, stir mashed potatoes with butter and milk until smooth and creamy.

  5. Spread mashed potatoes evenly over the meatloaf layer.

  6. Sprinkle shredded cheese evenly on top.

  7. Bake uncovered for 45–55 minutes, until meat is fully cooked and cheese is melted and bubbly.

  8. Let rest for 10 minutes before slicing and serving.


Tips and Variations

  • Use leftover mashed potatoes for convenience.

  • Add bacon bits or green onions to the potato layer.

  • Swap cheddar for mozzarella or pepper jack for a flavor twist.
