Ingredients

Crust

1½ cups crushed Golden Oreos or vanilla wafers

½ cup unsalted butter, melted
Strawberry Crunch Topping

1½ cups crushed Golden Oreos or vanilla wafers

½ cup strawberry gelatin powder (dry)

¼ cup unsalted butter, melted
Instructions

Preheat oven to 325°F (165°C). Line a 9×9-inch baking dish with parchment paper.

In a bowl, mix crushed cookies and melted butter. Press firmly into the bottom of the pan.

In a large bowl, beat cream cheese and sugar until smooth.

Add eggs one at a time, mixing just until combined. Stir in vanilla.

Pour cheesecake batter over the crust and smooth the top.

Bake for 35–40 minutes, until the center is set.

Allow cheesecake to cool completely, then refrigerate for at least 2 hours.

In a separate bowl, mix crushed cookies, strawberry gelatin powder, and melted butter.

Sprinkle the strawberry crunch evenly over the chilled cheesecake, pressing lightly.
