Strawberry Crunch Cheesecake Chunks

Strawberry crunch cheesecake chunks are bite-sized dessert bars made with a creamy cheesecake base, topped with a buttery strawberry crunch layer inspired by classic strawberry shortcake ice cream bars. They’re rich, sweet, and perfect for parties, dessert trays, or make-ahead treats.


Ingredients

Cheesecake Layer

  • 2 packages (8 oz each) cream cheese, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

Crust

  • 1½ cups crushed Golden Oreos or vanilla wafers

  • ½ cup unsalted butter, melted

Strawberry Crunch Topping

  • 1½ cups crushed Golden Oreos or vanilla wafers

  • ½ cup strawberry gelatin powder (dry)

  • ¼ cup unsalted butter, melted


Instructions

  1. Preheat oven to 325°F (165°C). Line a 9×9-inch baking dish with parchment paper.

  2. In a bowl, mix crushed cookies and melted butter. Press firmly into the bottom of the pan.

  3. In a large bowl, beat cream cheese and sugar until smooth.

  4. Add eggs one at a time, mixing just until combined. Stir in vanilla.

  5. Pour cheesecake batter over the crust and smooth the top.

  6. Bake for 35–40 minutes, until the center is set.

  7. Allow cheesecake to cool completely, then refrigerate for at least 2 hours.

  8. In a separate bowl, mix crushed cookies, strawberry gelatin powder, and melted butter.

  9. Sprinkle the strawberry crunch evenly over the chilled cheesecake, pressing lightly.

  10. Cut into chunks or bars and serve chilled.


Tips and Variations

  • For extra strawberry flavor, add a thin layer of strawberry preserves under the crunch topping.

  • Freeze briefly before cutting for clean edges.

  • Store refrigerated for up to 4 days.
