Cherry Chip Cheesecake Bites

Ingredients
Crust

1½ cups crushed graham crackers or vanilla wafers

½ cup unsalted butter, melted
Cheesecake Filling

2 packages (8 oz each) cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

¾ cup cherry baking chips
Instructions

Preheat oven to 325°F (165°C). Line a mini muffin pan with paper liners.

In a bowl, mix crushed crackers and melted butter until combined.

Press about 1 tablespoon of crust mixture into each liner.

Bake crusts for 5 minutes, then remove from oven.

In a large bowl, beat cream cheese and sugar until smooth.

Add eggs one at a time, mixing just until combined. Stir in vanilla.

Fold in cherry chips gently.

Spoon cheesecake mixture over crusts, filling liners nearly full.

Bake for 15–18 minutes, until centers are set.

Cool completely, then refrigerate for at least 2 hours before serving.
Tips and Variations
