Cherry Chip Cheesecake Bites

Description:
Cherry chip cheesecake bites are creamy, bite-sized desserts made with smooth cheesecake filling studded with cherry chips, baked over a buttery crust. Sweet, colorful, and easy to serve, they’re perfect for parties, dessert trays, or make-ahead treats.


Ingredients

Crust

  • 1½ cups crushed graham crackers or vanilla wafers

  • ½ cup unsalted butter, melted

Cheesecake Filling

  • 2 packages (8 oz each) cream cheese, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • ¾ cup cherry baking chips


Instructions

  1. Preheat oven to 325°F (165°C). Line a mini muffin pan with paper liners.

  2. In a bowl, mix crushed crackers and melted butter until combined.

  3. Press about 1 tablespoon of crust mixture into each liner.

  4. Bake crusts for 5 minutes, then remove from oven.

  5. In a large bowl, beat cream cheese and sugar until smooth.

  6. Add eggs one at a time, mixing just until combined. Stir in vanilla.

  7. Fold in cherry chips gently.

  8. Spoon cheesecake mixture over crusts, filling liners nearly full.

  9. Bake for 15–18 minutes, until centers are set.

  10. Cool completely, then refrigerate for at least 2 hours before serving.


Tips and Variations

  • Top with a small dollop of cherry pie filling for extra flavor.

  • White chocolate chips can be used if cherry chips are unavailable.

  • Store refrigerated for up to 4 days or freeze for longer storage
