Pineapple Coconut Dream Cake

Ingredients

Cake

  • 1 box yellow or white cake mix

  • Ingredients listed on cake mix box

Pineapple Layer

  • 1 can (20 oz) crushed pineapple, undrained

  • ½ cup granulated sugar

Creamy Topping

  • 1 package (8 oz) cream cheese, softened

  • 1 cup powdered sugar

  • 1 container (8 oz) whipped topping, thawed

  • 1 cup sweetened shredded coconut


Instructions

  1. Prepare and bake cake according to package directions in a 9×13-inch baking dish. Let cool completely.

  2. In a saucepan over medium heat, combine crushed pineapple and granulated sugar. Bring to a gentle boil and cook 2–3 minutes.

  3. Remove from heat and let pineapple mixture cool slightly.

  4. Spread pineapple mixture evenly over the cooled cake.

  5. In a bowl, beat cream cheese and powdered sugar until smooth.

  6. Fold in whipped topping until light and fluffy.

  7. Spread cream cheese mixture evenly over the pineapple layer.

  8. Sprinkle shredded coconut on top.

  9. Refrigerate for at least 2 hours before serving.


Tips and Variations

  • Toast coconut for extra flavor and texture.

  • Add chopped pecans or macadamia nuts for crunch.

  • This cake is best served chilled.
