Lazy Day Lemon Cream Pie Bars are an easy, no-fuss dessert with a buttery crust, a smooth and creamy lemon filling, and a light whipped topping. Bright, refreshing, and perfectly sweet-tart, they’re ideal for warm days, potlucks, or whenever you want a simple lemon treat.


Ingredients

Crust

  • 1 box lemon cake mix

  • ½ cup unsalted butter, melted

  • 1 large egg

Lemon Cream Filling

  • 1 package (8 oz) cream cheese, softened

  • 1 can (14 oz) sweetened condensed milk

  • ½ cup lemon juice

  • Zest of 1 lemon

Topping

  • 1 container (8 oz) whipped topping, thawed


Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or grease well.

  2. In a bowl, mix lemon cake mix, melted butter, and egg until crumbly.

  3. Press mixture firmly into the bottom of the prepared dish.

  4. Bake for 12–15 minutes, until lightly set.

  5. In a bowl, beat cream cheese until smooth.

  6. Mix in sweetened condensed milk, lemon juice, and lemon zest until creamy.

  7. Pour lemon filling over the warm crust and spread evenly.

  8. Return to oven and bake for 20–25 minutes, until set.

  9. Cool completely, then refrigerate for at least 2 hours.

  10. Spread whipped topping evenly over chilled bars before slicing and serving.


Tips and Variations

  • Chill overnight for the cleanest slices.

  • Add a dusting of crushed vanilla wafers or graham crackers on top.

  • These bars store well refrigerated for up to 4 days.
