Crockpot French Onion Meatloaf is a comforting twist on a classic dinner favorite. Made with savory ground beef, French onion soup mix, melty Swiss cheese, and tender onions, this slow-cooked meatloaf is incredibly moist and packed with rich, savory flavor. Cooking it low and slow allows the flavors to fully develop while keeping the meat tender and juicy—perfect for busy days when you want a hearty, homemade meal with minimal effort.


Ingredients

Meatloaf Base

  • 2 lbs ground beef

  • 1 packet French onion soup mix

  • 1 cup breadcrumbs

  • 2 large eggs

  • ¼ cup milk

Flavor & Filling

  • 1 cup shredded Swiss cheese (plus extra for topping, optional)

  • ½ cup chopped onions

  • 1 tablespoon Worcestershire sauce

  • ½ cup ketchup (optional)

  • Salt and black pepper, to taste


Instructions

Step 1: Mix the Meatloaf

In a large bowl, combine the ground beef, French onion soup mix, breadcrumbs, eggs, milk, and 1 cup shredded Swiss cheese.

Add the chopped onions, Worcestershire sauce, salt, and black pepper. Gently mix until just combined—do not overmix.


Step 2: Shape and Transfer

Shape the mixture into a firm loaf and place it directly into the bottom of a lightly greased slow cooker.

If desired, spread ketchup evenly over the top of the meatloaf.


Step 3: Cook Low and Slow

Cover and cook on LOW for 6 hours, or until the meatloaf reaches an internal temperature of 160°F (71°C).

Optional: During the last 15 minutes of cooking, sprinkle extra Swiss cheese on top and cover until melted.


Tips for Best Results

  • Use ground beef with some fat (80/20) for the juiciest meatloaf

  • Avoid overmixing to keep the texture tender

  • Line the slow cooker with foil or parchment for easier removal

  • Let the meatloaf rest for 10 minutes before slicing


Serving Suggestions

Serve Crockpot French Onion Meatloaf with:

  • Mashed potatoes

  • Green beans or roasted vegetables

  • Buttered noodles

  • A crisp side salad


Storage

  • Refrigerator: Store leftovers in an airtight container for up to 4 days
