High Protein Cheesy Buffalo Chicken

High Protein Cheesy Buffalo Chicken is a bold, flavorful dish made with tender chicken breast, tangy buffalo sauce, and plenty of melted cheese. Packed with protein and big on comfort, it’s perfect for meal prep, weeknight dinners, or a satisfying low-carb option.


Ingredients

  • 2 pounds boneless, skinless chicken breast, cubed

  • 1 cup buffalo wing sauce

  • 1 cup plain Greek yogurt (or light cream cheese for extra richness)

  • 1½ cups shredded mozzarella or cheddar cheese

  • ½ cup shredded Parmesan cheese

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.

  2. Season chicken with garlic powder, onion powder, salt, and pepper.

  3. Spread chicken evenly in the baking dish.

  4. In a bowl, mix buffalo sauce and Greek yogurt until smooth.

  5. Pour sauce mixture over the chicken and stir to coat evenly.

  6. Sprinkle mozzarella (or cheddar) and Parmesan evenly on top.

  7. Bake uncovered for 30–35 minutes, until chicken is cooked through and cheese is melted and bubbly.

  8. Let rest 5 minutes before serving.


Tips and Variations

  • Use rotisserie chicken to cut cooking time in half.

  • Add diced celery or green onions for classic buffalo flavor.

  • Serve over cauliflower rice, salad greens, or inside a wrap.
