Ingredients
For the Cajun Chicken:
1¼ lbs boneless, skinless chicken breasts, sliced into strips
1 tbsp olive oil
1 tbsp Cajun seasoning
½ tsp smoked paprika
Salt & black pepper, to taste
For the Spaghetti & Garlic Mozzarella Sauce:
12 oz spaghetti
2 tbsp butter
4 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
2 oz cream cheese, softened
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ tsp red pepper flakes (optional, for extra heat)
½ cup reserved pasta water (as needed)
Optional Garnish:
Fresh parsley
Extra Parmesan
Light sprinkle of Cajun seasoning
Instructions
Step 1: Cook the Spaghetti
Bring a pot of salted water to a boil. Cook spaghetti until al dente. Reserve ½ cup pasta water, drain, and set aside.
Step 2: Cook the Cajun Chicken
Season chicken with Cajun seasoning, smoked paprika, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear chicken strips for 3–4 minutes per side until golden and cooked through. Remove and set aside.
Step 3: Make the Garlic Mozzarella Sauce
In the same skillet, melt butter and sauté garlic until fragrant (about 30 seconds).
Pour in chicken broth and heavy cream, stirring to combine.
Whisk in cream cheese until smooth.
Stir in mozzarella and Parmesan until melted and creamy. Add red pepper flakes if using.
Step 4: Combine Everything
Add spaghetti to the sauce and toss to coat.
Return Cajun chicken to the skillet and gently fold everything together.
Use reserved pasta water to loosen the sauce if needed.
Step 5: Serve & Garnish
Plate hot spaghetti with chicken on top. Garnish with parsley, extra Parmesan, and a pinch of Cajun seasoning.
