Apple Pecan Cake with Caramel Glaze

Ingredients

Cake

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • ½ teaspoon salt

  • 1 cup granulated sugar

  • ½ cup brown sugar, packed

  • ¾ cup vegetable oil

  • 2 large eggs

  • 2 cups peeled, finely chopped apples

  • 1 teaspoon vanilla extract

  • 1 cup chopped pecans

Caramel Glaze

  • ½ cup unsalted butter

  • 1 cup brown sugar, packed

  • ¼ cup heavy cream or milk

  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch pan or Bundt pan.

  2. In a bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt.

  3. In a separate bowl, mix granulated sugar, brown sugar, oil, and eggs until smooth.

  4. Stir in apples and vanilla.

  5. Gradually add dry ingredients to wet ingredients, mixing just until combined.

  6. Fold in chopped pecans.

  7. Pour batter into prepared pan and spread evenly.

  8. Bake for 40–45 minutes (9×13) or 50–55 minutes (Bundt), until a toothpick inserted comes out clean.

  9. While cake bakes, melt butter in a saucepan over medium heat.

  10. Stir in brown sugar and cream. Bring to a gentle boil and cook 2–3 minutes, stirring constantly.

  11. Remove from heat and stir in vanilla.

  12. Pour warm caramel glaze over warm cake.

  13. Cool slightly before serving.


Tips and Variations

  • Use Granny Smith or Honeycrisp apples for best flavor.

  • Add a pinch of cloves for extra spice.

  • Serve warm with vanilla ice cream or whipped cream.
