Chicken, Spinach, and Mushroom Low-Carb Oven Dish

Description:
This chicken, spinach, and mushroom low-carb oven dish is a creamy, savory meal that’s rich in protein and vegetables while staying low in carbs. Baked until bubbly and tender, it’s perfect for a healthy weeknight dinner or easy meal prep.


Ingredients

  • 2 pounds boneless, skinless chicken breasts, cut into bite-size pieces

  • 2 tablespoons olive oil

  • 8 oz mushrooms, sliced

  • 3 cloves garlic, minced

  • 4 cups fresh spinach

  • 1 cup heavy cream or half-and-half

  • 1 cup shredded mozzarella or Italian-blend cheese

  • ½ cup grated Parmesan cheese

  • 1 teaspoon Italian seasoning

  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.

  2. Heat olive oil in a skillet over medium heat. Sauté mushrooms until softened.

  3. Add garlic and cook 30 seconds. Stir in spinach and cook just until wilted.

  4. Spread raw chicken evenly in the prepared baking dish. Season with salt, pepper, and Italian seasoning.

  5. Spoon mushroom and spinach mixture over the chicken.

  6. Pour cream evenly over the top.

  7. Sprinkle mozzarella and Parmesan over the dish.

  8. Cover loosely with foil and bake 25 minutes.

  9. Remove foil and bake an additional 15–20 minutes, until chicken is cooked through and cheese is bubbly and lightly golden.

  10. Let rest 5 minutes before serving.


Tips and Variations

  • Add cream cheese for extra richness.

  • Use chicken thighs for a juicier result.

  • Serve with cauliflower rice or zucchini noodles.
