  • Corn muffin mix (such as Jiffy) – 1 box (8½ oz)

  • Garlic powder – 1 teaspoon

  • Ground cumin – 1 teaspoon

  • Salt – 1 teaspoon

  • Black pepper – ½ teaspoon


Directions

1. Prepare the Oven and Baking Dish

Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish and set aside.

2. Mix the Base

In a large bowl, combine the shredded zucchini, diced onion, 8 oz of the shredded cheddar, corn, jalapeño, and eggs. Add garlic powder, cumin, salt, and black pepper. Stir until evenly mixed.

3. Incorporate the Corn Muffin Mix

Gradually fold in the corn muffin mix until fully incorporated. The batter will be thick and chunky.

4. Top and Bake

Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining 8 oz of cheddar cheese evenly over the top. Bake for 50–55 minutes.

5. Check for Doneness

The casserole is done when the cheese is melted, golden, and bubbly, and the center is set. Let rest for 5–10 minutesbefore slicing and serving.
