Buttery Coconut Oatmeal Cookies
Ingredients
• 1 cup unsalted butter, softened
• 1 cup brown sugar
• ½ cup granulated sugar
• 2 large eggs
• 2 teaspoons vanilla extract
• 1 ½ cups all-purpose flour
• 1 teaspoon baking soda
• ½ teaspoon salt
• 1 ½ cups rolled oats
• 1 ½ cups shredded sweetened coconut

• Cream the butter, brown sugar, and granulated sugar together until light and fluffy.
• Mix in the eggs and vanilla extract until smooth.
• In a separate bowl, combine the flour, baking soda, and salt.
• Add the dry mixture into the wet ingredients and mix until just combined.
• Stir in the oats and shredded coconut until evenly distributed.
• Scoop the dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
• Bake at 350°F (175°C) until the edges are golden and the centers are set.
• Allow the cookies to cool on the sheet briefly before transferring them to a wire rack.
