Chocolate Rice Krispie Balls

Indulge in the delightful world of homemade sweets with these Chocolate Rice Krispie Balls. This easy no-bake recipe combines creamy peanut butter, rich chocolate, and crunchy Rice Krispies for a sweet treat that’s perfect for holidays, parties, or anytime cravings. These bite-sized desserts are especially popular during the Christmas season.


Ingredients

  • ½ cup peanut butter

  • 3 tablespoons soft butter

  • 1 teaspoon vanilla extract

  • 1 cup Rice Krispies cereal

  • ½ cup chopped pecans

  • 1 cup shredded coconut

  • 1 package chocolate chips

  • 1 square sweet chocolate


Instructions

Step 1: Make the Mixture

In a large bowl, mix together the peanut butter, soft butter, vanilla extract, Rice Krispies, chopped pecans, and shredded coconut until well combined.

Cover the bowl and refrigerate for at least 30 minutes, or until the mixture is firm enough to shape.


Step 2: Form the Balls

Remove the mixture from the refrigerator and roll it into small balls, about 1 inch in size. Place them on a parchment-lined tray.

Return the tray to the refrigerator and chill for at least 1 hour.


Step 3: Melt the Chocolate

Using a double boiler, melt the chocolate chips and sweet chocolate square together over low heat. Stir gently until smooth, keeping the heat low so the chocolate stays soft and glossy.


Step 4: Coat the Balls

Drop the chilled balls into the melted chocolate one at a time. Use a fork to roll each ball until fully coated, then lift it out and allow excess chocolate to drip off.

Place the coated balls back onto parchment paper.


Step 5: Set

Refrigerate until the chocolate is fully set. The balls can also be frozen if desired.


Tips & Notes

  • These treats are a holiday favorite, especially at Christmas

  • The balls can be refrigerated overnight or frozen and dipped later

  • Keep them chilled for best texture and flavor


Storage

Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 2 months.
