These Cinnamon Roll French Toast Roll-Ups combine everything you love about cinnamon rolls and classic French toast into one irresistible breakfast treat. Soft white bread is rolled with a buttery cinnamon-sugar filling, pan-fried until golden, and finished with a sweet glaze. Perfect for weekend breakfasts, brunch, or a cozy morning treat.


Ingredients

Roll-Ups

  • 8 slices white sandwich bread

  • 3 tablespoons butter, softened

  • ¼ cup brown sugar

  • 1 teaspoon ground cinnamon

French Toast Coating

  • 2 large eggs

  • ¼ cup milk

  • ½ teaspoon vanilla extract

For Cooking

  • 2 tablespoons butter

Optional Glaze

  • ½ cup powdered sugar

  • 1–2 tablespoons milk

  • ¼ teaspoon vanilla extract


Instructions

Step 1: Prepare the Bread

Trim the crusts from each slice of bread. Using a rolling pin, flatten each slice gently.


Step 2: Make the Filling

In a small bowl, mix softened butter, brown sugar, and cinnamon until smooth.

Spread a thin layer of the mixture over each slice of bread.


Step 3: Roll

Starting from one end, tightly roll each slice into a spiral. Set aside seam-side down.


Step 4: Make the Egg Mixture

In a shallow bowl, whisk together eggs, milk, and vanilla extract.


Step 5: Cook

Heat butter in a nonstick skillet over medium heat.

Dip each roll-up quickly into the egg mixture, coating all sides.

Place in the skillet and cook for 2–3 minutes per side, turning gently until golden brown all around.


Step 6: Glaze (Optional)

Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over warm roll-ups before serving.


Tips & Variations

  • Add a pinch of nutmeg to the filling for extra warmth

  • Roll in cinnamon sugar after cooking for a crisp exterior

  • Serve with maple syrup instead of glaze

  • Fill with cream cheese for a richer version
