These Cinnamon Sugar Bite-Size Biscuits are sweet, soft on the inside, lightly crisp on the outside, and incredibly easy to make. Using refrigerated biscuits, melted butter, and a cinnamon-sugar coating, they come together in minutes and bake into irresistible little bites. Perfect for breakfast, brunch, dessert, or a quick sweet snack.

Drizzle with vanilla icing for an extra indulgent finish, or enjoy them warm straight from the pan.


Ingredients

Biscuit Bites

  • 1 tube refrigerated biscuits

  • 4 tablespoons butter, melted

  • ½ cup granulated sugar

  • 1 tablespoon ground cinnamon

Vanilla Icing

  • 1 cup confectioners’ sugar

  • 2–3 tablespoons milk

  • ½ teaspoon vanilla extract


Instructions

Step 1: Preheat and Prepare

Preheat the oven to 375°F (190°C).
Lightly grease an 8×8-inch baking dish.

In one shallow bowl, melt the butter.
In another bowl, mix the granulated sugar and cinnamon until well combined.


Step 2: Cut the Biscuits

Using kitchen scissors or a knife, cut each biscuit into three bite-sized pieces.


Step 3: Coat the Biscuits

Dip each biscuit piece into the melted butter, then roll it in the cinnamon-sugar mixture until fully coated.

Arrange the coated pieces evenly in the prepared baking dish.


Step 4: Bake

Bake uncovered for 15–18 minutes, or until the biscuits are puffed, golden, and cooked through.


Step 5: Make the Icing

While the biscuits bake, whisk together confectioners’ sugar, milk, and vanilla extract until smooth. Adjust milk for desired drizzle consistency.


Step 6: Finish and Serve

Drizzle icing over warm biscuits. Serve immediately.


Tips & Variations

  • Add a pinch of nutmeg for extra warmth

  • Skip the icing for a lighter version

  • Add chopped pecans or walnuts before baking

  • Serve with cream cheese glaze instead of vanilla icing


Storage

  • Best served fresh and warm

  • Store leftovers covered at room temperature for 1 day or refrigerate up to 3 days

  • Reheat briefly in the microwave or oven
