Collard Greens and Ham Hocks is a classic Southern comfort dish known for its deep, savory flavor and tender greens. Slow-simmered ham hocks infuse the broth with smokiness, while onions, garlic, and spices balance the natural bitterness of the collards. This hearty recipe is perfect as a main dish or a soulful side.


Ingredients

  • 2 large ham hocks

  • 2 lbs collard greens, stems removed and leaves roughly chopped

  • 4 cups chicken broth

  • 1 large onion, chopped

  • 4 cloves garlic, minced

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon crushed red pepper flakes (optional)

  • 1 teaspoon smoked paprika

  • 1 teaspoon sugar (optional, to balance bitterness)

  • Salt and black pepper, to taste

  • 1 tablespoon olive oil (optional, for additional richness)


Instructions

  1. Prepare the Ham Hocks
    In a large pot or Dutch oven, heat the olive oil over medium heat if using. Add the ham hocks and brown them lightly on all sides for extra flavor.

  2. Sauté Aromatics
    Add the chopped onion to the pot and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.

  3. Build the Broth
    Pour in the chicken broth, then add smoked paprika, crushed red pepper flakes, black pepper, and sugar if using. Bring the mixture to a gentle boil.

  4. Simmer the Ham Hocks
    Reduce heat to low, cover, and simmer for 45–60 minutes, until the ham hocks are tender and the broth is deeply flavored.

  5. Add the Collard Greens
    Stir the chopped collard greens into the pot in batches, allowing them to wilt before adding more. Cover and simmer for another 45–60 minutes, stirring occasionally, until the greens are very tender.

  6. Finish and Season
    Stir in the apple cider vinegar. Taste and adjust seasoning with salt and black pepper as needed.

  7. Serve
    Remove the ham hocks, shred the meat if desired, and return it to the pot. Serve hot with some of the rich broth.


Tips for Best Flavor

  • Longer simmering results in more tender greens and deeper flavor

  • Vinegar added at the end brightens the dish and balances richness

  • Sugar is optional but helps reduce bitterness in mature collard greens


Serving Suggestions

Serve collard greens and ham hocks with:

  • Cornbread

  • White rice

  • Mashed potatoes

  • Black-eyed peas or pinto beans


Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavor improves the next day. Reheat gently on the stovetop.
