These cookies made from brownie mix are rich, fudgy, and unbelievably easy. With a crackly top, chewy center, and deep chocolate flavor, they taste like the best parts of brownies and cookies combined. Perfect for last-minute baking, holidays, or when you want a chocolate fix with minimal effort.


Ingredients

  • 1 box (18 oz) brownie mix

  • ¼ cup all-purpose flour

  • 2 large eggs

  • ¼ cup vegetable oil

  • 1 teaspoon vanilla extract

Optional add-ins:

  • Chocolate chips or chunks

  • Chopped walnuts or pecans

  • White chocolate chips


Instructions

  1. Preheat the Oven
    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Mix the Dough
    In a large bowl, combine the brownie mix and flour. Add the eggs, vegetable oil, and vanilla extract. Stir until a thick, sticky dough forms.

  3. Add Mix-Ins (Optional)
    Fold in chocolate chips or nuts if using.

  4. Scoop the Cookies
    Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

  5. Bake
    Bake for 9–11 minutes, or until the edges are set but the centers are still soft. Do not overbake for fudgy cookies.

  6. Cool
    Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.


Tips for Perfect Brownie Cookies

  • The dough will be thicker than regular cookie dough — this is normal

  • Slight underbaking keeps the cookies soft and chewy

  • Different brownie mixes may slightly change texture, but all work well


Variations

  • Add peppermint extract for a holiday twist

  • Sandwich two cookies with frosting or cream cheese filling

  • Drizzle cooled cookies with melted chocolate


Storage

Store cookies in an airtight container at room temperature for up to 4 days. They can also be frozen for up to 2 months.
