Gnocchi Chicken Pot Pie

Ingredients

  • 2 cups cooked chicken, diced or shredded

  • 1 package (16 oz) potato gnocchi

  • 2 tablespoons butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup frozen peas and carrots

  • 1 cup frozen corn

  • 3 tablespoons all-purpose flour

  • 2 cups chicken broth

  • 1 cup milk or half-and-half

  • 1 teaspoon dried thyme

  • ½ teaspoon black pepper

  • Salt to taste


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.

  2. In a large skillet, melt butter over medium heat.

  3. Add onion and cook until soft, about 3 minutes.

  4. Stir in garlic and cook 30 seconds.

  5. Sprinkle flour over vegetables and stir well. Cook 1 minute.

  6. Gradually whisk in chicken broth and milk until smooth.

  7. Stir in thyme, pepper, and salt. Simmer until sauce thickens.

  8. Add chicken, frozen vegetables, and gnocchi. Stir to coat evenly.

  9. Transfer mixture to prepared baking dish.

  10. Bake uncovered for 25–30 minutes, until bubbly and lightly golden.

  11. Let rest 5 minutes before serving.


Tips and Variations

  • Use rotisserie chicken to save time.

  • Add mushrooms for extra depth.

  • Sprinkle shredded biscuit or puff pastry crumbs on top for crunch.
