Hearty Beef with Green Chile and Potatoes

Description:
Hearty beef with green chile and potatoes is a warm, comforting dish made with tender chunks of beef simmered in a savory green chile sauce with soft potatoes. Rich, mildly spicy, and deeply satisfying, this one-pot meal is perfect for cool evenings and is best served with warm bread or tortillas.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes

  • 2 tablespoons vegetable oil

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 2 cups diced green chiles (roasted Hatch or canned)

  • 4 cups beef broth

  • 3 medium potatoes, peeled and cubed

  • 1 teaspoon ground cumin

  • 1 teaspoon dried oregano

  • ½ teaspoon black pepper

  • Salt to taste

  • 1 tablespoon flour (optional, for thickening)


Instructions

  1. Heat oil in a large pot or Dutch oven over medium-high heat.

  2. Add beef cubes and brown on all sides. Remove and set aside.

  3. In the same pot, add onion and cook until softened, about 4 minutes.

  4. Stir in garlic and cook for 30 seconds until fragrant.

  5. Return beef to the pot and add green chiles, beef broth, cumin, oregano, pepper, and salt.

  6. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour.

  7. Add cubed potatoes and continue simmering uncovered for 25–30 minutes, until potatoes are tender and beef is fork-tender.

  8. If a thicker stew is desired, mix flour with 2 tablespoons water and stir into the pot. Simmer 5 more minutes.

  9. Adjust seasoning and serve hot.


Tips and Variations

  • Use mild or hot green chiles depending on your spice preference.

  • Add carrots for extra heartiness.

  • This dish tastes even better the next day as the flavors develop.
