2 pounds beef chuck, cut into 1-inch cubes

2 cups diced green chiles (roasted Hatch or canned)

4 cups beef broth

3 medium potatoes, peeled and cubed

1 teaspoon ground cumin

1 teaspoon dried oregano

½ teaspoon black pepper

1 tablespoon flour (optional, for thickening)
Instructions

Heat oil in a large pot or Dutch oven over medium-high heat.

Add beef cubes and brown on all sides. Remove and set aside.

In the same pot, add onion and cook until softened, about 4 minutes.

Stir in garlic and cook for 30 seconds until fragrant.

Return beef to the pot and add green chiles, beef broth, cumin, oregano, pepper, and salt.
