This Oven-Baked 4-Ingredient Corn and Cheese Pudding is a traditional Southern side dish that falls somewhere between a savory custard and a comforting casserole. With a higher ratio of eggs than most corn bakes, it has a light, airy, pudding-like texture, while the corn provides little pops of natural sweetness in every bite.

It’s simple, old-fashioned, and incredibly versatile—perfect for holiday tables, potlucks, or an easy Sunday supper alongside roasted meats or fried chicken.


Ingredients

Main Components

  • 2 cups corn kernels (canned and drained, or frozen and thawed)

  • 1½ cups shredded cheese (Cheddar or Colby Jack work best)

  • 2 cups half-and-half or whole milk

  • 4 large eggs

Optional seasonings (traditional but not required):
Salt and black pepper to taste


Instructions

1. Preheat the Oven

Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish or similar-sized casserole dish.

2. Whisk the Custard Base

In a large bowl, whisk together the eggs and milk until fully blended and smooth.

3. Add Corn and Cheese

Stir in the corn kernels and shredded cheese. If using salt and pepper, add them now and mix gently.

4. Bake

Pour the mixture into the prepared baking dish. Bake uncovered for 40–45 minutes, or until the center is set and the top is lightly golden. A knife inserted in the center should come out mostly clean.

5. Rest and Serve

Let the pudding rest for 5–10 minutes before serving. This helps it finish setting while staying soft and creamy inside.
