3 cups chicken or vegetable broth

2 cups milk or half-and-half

2 cups shredded sharp cheddar cheese

Salt and black pepper to taste
Instructions

In a large pot, melt butter over medium heat.

Add onion and cook until soft, about 3–4 minutes.

Stir in garlic and cook 30 seconds.

Sprinkle flour over onions and stir to form a roux. Cook 1 minute.

Slowly whisk in broth, then milk, stirring until smooth.
