Protein Cream Cheese Pecan Cookies (Low-Carb)

Description:
Protein cream cheese pecan cookies are soft, lightly sweet, and nutty low-carb treats made with cream cheese for richness and added protein for a satisfying bite. They’re perfect for a healthier dessert or snack without refined sugar.


Ingredients

  • 4 oz cream cheese, softened

  • ¼ cup unsalted butter, softened

  • ½ cup powdered monk fruit or erythritol sweetener

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 cup almond flour

  • ½ cup vanilla or unflavored protein powder (low-carb)

  • ½ teaspoon baking powder

  • Pinch of salt

  • ½ cup chopped pecans


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a bowl, beat cream cheese and butter until smooth and creamy.

  3. Mix in sweetener, egg, and vanilla until fully combined.

  4. In a separate bowl, whisk almond flour, protein powder, baking powder, and salt.

  5. Add dry ingredients to the wet mixture and stir until a soft dough forms.

  6. Fold in chopped pecans.

  7. Scoop tablespoon-sized portions onto the baking sheet and gently flatten.

  8. Bake for 10–12 minutes, until edges are lightly golden.

  9. Let cookies cool on the pan for 5 minutes before transferring to a wire rack.


Tips and Variations

  • Use cinnamon-flavored protein powder for extra warmth.

  • Toast pecans before adding for deeper flavor.

  • Store refrigerated for up to 5 days or freeze for longer storage.
